Do you know any Nutrional experts/therapists that have experience with dealing with people with SCI's, or other disabilitiies - MS, etc?

Not at the moment, but as we speak my wife is half way done with culinary school to become a chef, when she graduates there in September she is changing schools to become a nutritionist so she'll not only know what is healthy but the best way to cook it. Sadly that's still a few years away and I'm stuck with the same ol skinless chicken breast at just about every meal.

I'd probably recommend talking to a spinal consultant, I remembered directly after my injury a dietitian was trying to tell me how much I should eat, and I really don't eat that much and she wanted me to eat the same amount of food that I did prior to my injury... I kept trying to explain to her that I could not eat the same amount, and that I ate like a mouse anyway, and then she went and accused me of having an eating disorder. And she was a dietician in the spinal unit! So I would recommend speaking to a GP or a consultant because I might seem jaded, but I think GPs and consultants understand better the more technical details of spinal cord injury etc
