I'm interested in Food Intolerances and how this may affects SCI's more, as our systems are often more sluggish from being seated all the time, or our digestion is accelorated by apperients etc. I think a lot of the excess weight we carry could be attributed to fluid retention caused by food intolerances, but I can't find any one any where that has any experience on this subject.
I even explored the idea of settng up a "health farm" with weeks dedicated to different disabilities, but can't find anyone with the required knowledge on diet/nutrition and SCI, which is the most important part of this sort of thing.

As a matter of interest i am in touch with Dr Gillian McKeith (of 'You are what You eat' television fame on BBC Prime TV). She has promised to look into this for us, and as soon as I get response from her will pass info onto you via email.
