Okay, my evil side has been requested to summon forth a completely sinful dessert...top it with whipped cream; clotted cream for the Brits, maybe a chocolate sprinkle or two or three...just because...btw, you can shared this with your favorite tart if you wish :suicide:

Chocolate-Fudge Pudding Cake

Ingredients:

- 1/2 cup whole-wheat pastry flour
- 1/2 cup all-purpose flour
- 1/3 cup sugar
- 1/4 cup unsweetened cocoa powder, sifted
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup 1% milk
- 2 tablespoons canola oil
- 2 teaspoons vanilla extract
- 3/4 cup semisweet chocolate chips
- 1/2 cup semisweet shredded coconut
- 1-1/3 cups hot brewed coffee
- 2/3 cup packed light brown sugar
- 1/4 cup chopped walnuts, toasted
- 1/4 cup chopped pecans, toasted
- Confectioners’ sugar ie. powdered sugar

Preparation:

- Preheat oven to 350°F.
- Coat a 1 1/2- to 2-quart baking dish with cooking spray.
- Whisk whole-wheat flour, all-purpose flour, sugar, cocoa, baking powder and salt in a large bowl.
- Whisk egg, milk, oil and vanilla in a glass measuring cup.
- Add to the flour mixture; stir with a rubber spatula until just combined.
- Fold in chocolate chips and coconut.
- Scrape the batter into the prepared baking dish.
- Mix hot coffee and brown sugar in the measuring cup and pour over the batter.
- Sprinkle with nuts.
- Bake the pudding cake until the top springs back when touched lightly, 30 to 35 minutes.
- Let cool for at least 10 minutes.
- Dust with confectioners' sugar and serve hot or warm.

My wife is a pastry chef so

Her cheesecake, hands down the very best cheesecake you have ever tasted, I'm biased but every single person that has ever had a piece agrees, the recipe? She won't even tell me.

She also makes great Sticky Buns, Cinnamon Rolls, Chocolate Chip Cookies and Brownies. Well she makes everything good, but those are my favorites.

Personally some of my biggest kitchen disasters made my favourite desserts. Unfortunately they are difficult to emulate again. I once tried to make russian fudge. It didn't set so I put it back in the pot again - second time it didn't set. It was a double batch so I got "creative" for lack of a better term. I went to the supermarket and bought malt biscuits, cornflakes, muesli and something else which I don't recall, maybe raisins. Partly crushed the cornflakes, added them and the powdered malt biscuits and the secret ingredient. Next thing I rolled it into balls in the Muesli and ouila - out came these things that looked like rum balls and tasted amazing. Lots of people at work asked me for the recipe but I couldn't give it to them because I didn't know it.

A few Christmases ago I decided to make my own mince pies. After I mixed up the fruit mince and left it soak for a couple of days I noticed my small pie dishes had all gone really rusty and were unusable because someone had put them away wet. I tried the pie maker but they were taking over thirty minutes each. In the end I lined the big pie dish and made two big mothers of Christmas mince pie. They must have been around two or three pounds each and had so much alcohol in them I thought our oven would spontaneously combust. Anyway, left them in there until they looked cooked and sprinkled them with icing to cover a few minor imperfections. They tasted great with whipped cream and made it very easy to get into the spirit of Christmas with a few shots of good brandy in every slice. Took the other one into work and one of the women jokingly proposed to me on the spot. LOL

Mainly my favourite dessert is fruit pies, partly because they are nice but also my excuse is that all that fruit can't be that unhealthy. Kind of like eating a cream donut and diet coke. The Americans make great pies, first time I tried one I was in a roadside diner so I had to try cherry pie, that one was a bit disappointing but I found a restaurant over the road from my hotel that advertised "America's best pies" (some of you Americans may know who they are but I don't remember their name) and they were pretty awesome. Over 8 days I think I tried every sweet pie on their menu. Gained a few pounds of excess baggage on that trip, luckily I transported it all internally.

That's the idea Jerry! Don't know about you all, but I've never been much of a Merachino Cherry fan though. I usually give that part away.

Nice Jules, you should look into doing them professionally, you have a talent and there is big money in it. My wife has done a few smaller weddings but is doing a big one in November, well at least big to us since they have a $4,000 budget for food.

Does anyone here have a good but simple cupcake recipe? I have volunteered to make some for charity in a couple of weeks and have never made them before in my life. And by the way Jules, I wouldn't know they weren't real roses. They are probably the best ones I have ever seen. My Mum and sister went to a cake decorating skills course and they used to get me to do their "homework". They could never get their icing smooth. As I had laid concrete a few times I gave it a crack and hey presto, it didn't turn out too bad. I don't remember it ever being as good as your cake looked though. Looks almost too good to eat.

By cupcakes I am guessing you mean what we would call fairy cakes, the easiet recipe I use is very straightforward.
4oz Self raising flour
4oz Caster sugar
4oz butter/margarine
2 eggs

Put all ingredients in a bowl and mix until light and fluffy. That should make about 12, if you want to make more for each egg you add to the recipe add 2 oz of other ingredients
e.g
6,6,6, and 3 eggs.

I generally put about a dessert spoon full of mixture in each paper case and bake for about 20mins at 160 degrees c.


Thanks for the compliments about the wedding cake too Texaswheelz. That cake I did as a present for our friends.

Carrot Cake - added pineapple and toasted coconut...it's :drooldrip:
Ingredients:

Cake
- 20-ounce can crushed pineapple
- 2 cups whole-wheat pastry flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 large eggs
- 1-1/2 cups granulated sugar
- 3/4 cup nonfat buttermilk
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1/4 cup unsweetened flaked coconut
- 1/2 cup chopped walnuts

Frosting
- 12 ounces reduced-fat cream cheese, softened
- 1/2 cup confectioners’ sugar, sifted
- 1-1/2 teaspoons vanilla extract
- 2 tablespoons coconut chips or flaked coconut, toasted

Preparation:

- Preheat oven to 350°F.
- Coat a 9-by-13-inch baking pan with cooking spray.
- Drain pineapple in a sieve set over a bowl, pressing on the solids. Reserve the drained pineapple and 1/4 cup of the juice.
- Whisk flour, baking soda, salt and cinnamon in a medium bowl.

- Whisk eggs, sugar, buttermilk, oil, vanilla and the 1/4 cup pineapple juice in a large bowl until blended.
- Stir in pineapple, carrots and 1/4 cup coconut.
- Add the dry ingredients and mix with a rubber spatula just until blended.
- Stir in the nuts. Scrape the batter into the prepared pan, spreading evenly.

- Bake the cake until the top springs back; about 40 to 45 minutes.
- Let cool completely on a wire rack.

- Beat cream cheese, confectioners’ sugar and vanilla in a mixing bowl with an electric mixer until smooth and creamy.
- Spread the frosting over the cooled cake. Sprinkle with toasted coconut.
