Hey!
I just went to Peurta Vallarta with my friends and I think it would be a great place for you to go. It's not labelled as a wheelchair accessible place but there are ramps everywhere, dining places are all accessible and you should be able to get around the city as well. Its a very tourist town and there are cobble stone walkways ( I dont know if that would be a problem) but im sure your boyfriend would be beside you. The bars and shops are in walking distance and i dont remember there being many stairs.
This is the website for the place I stayed at: http://www.puntaarena.com/
hope that helps?
