I'm happy to help you out if you want. Maybe a similar system to what I've designed for karts can be used on UTVs. The only 2 area's I see that need to be looked at are which hydraulic brake system will work best and how to fit the quick release handle bar system to the steering column of your UTV, but that's simple - just let me see a photo of how the existing steering wheel is fitted to the steering column and I'll let you know.
The hydraulic brake system I use for these hand controls may not be strong enough for UTV brakes, so I suggest simply fitting a left hand motorbike hyraulic brake plumbed directly into the master cylinder of the existing brake system. Simple and very easy on the hands.
A twist grip throttle could be used, but when the steering is on full lock to the right, you'll struggle to twist the grip, so a brake lever from a bicyle is often the simplest and most effective solution, with the throttle cable attached. Easy to fit, repair, fine tune etc.
Having a handle bar system makes it easy to steer, and with both hands on the handle bar, you can throttle and brake easily and both at the same time when necessary (ie in a tricky situation when you need throttle right away as soon as the brake comes off). Having both hands on the handle bars also gives you more stablility, as opposed to having one hand on the steering wheel and using a push/pull system of hand controls.
Let me know if you need any more info. I can supply you with the handle bar, quick release system and throttle level - you'd just need to find a motorbike shop to supply you with a left hand hydraulic brake system and get it fitted, and you're back in the dirty!
