Anyone know where I can go to find a Dr that understands the ins/outs of being a paraplegic? My g/f has all these specialist, none of which have dealt with a para and we just keep going in circles.

She should be seeing a physiatrist - which is a doctor whose focus is on SCI and rehabilitation. Here's a link that might help you. http://www.physiatry...Physiatrist.cfm

She's seen one before, but is this the right kind of Dr to oversee all of her care? She's having gastroenterology problems...would he have the knowledge to handle this coordinating with specialist?

Yes, I find they are good for being the overall provider, but at times you may need to see a specialist. My husband had to see a urologist for example and his physiatrist referred him over. He also has an internal meds doctor for his blood pressure.
