Advice Needed On Charity Handcycle

I am calling upon anyone who has done a run/cycle for charity!
I will give you a brief, I have decided to do some fundraising this year, and first on my list is Riding for the Disabled (RDA) and the Para Dressage Training Trust (PDTT), as they are dear to my heart and I wouldn't be as far along with my riding as I am now with out them. What I would love to do is a hand cycle over the highlands visiting each RDA centre which includes 7, Which I thought I could try for 7 centres in 7 Days? The calculated route begins in Orkney to Halkirk (Caithness) to Invergordon to Muir of Ord, then across to Skye, then across to Newtonmor (Cairngorms), and then finishing up at Fortrose (Nr Inverness) covering a whopping, 473 miles approx. My other Idea was to just begin in Orkney and make my way down the east coast to finish in Inverness which would be roughly 156 miles, but only going to 5 centres.
This is the part I need advice on, I haven't completely decided on how far I should go. How many miles would you expect to cover in a day? How much fitness work is required? (at the moment I average at 7 miles in a hour), I have never done a marathon or such like before.

I dont have any direct experience but I do have a para mate about the same level as us who has done lots of long distance hand cycling is it ok if i give him your email address?
There must be a way to plan a route which might be longer but flatter.

Yes please Tom, do you still have my email address?
Thank you everyone for your kind comments of support already. I am still planning on doing this but will need some thorough research, so will be a long term goal. But will keep you posted on it!

Hahah I'd rather magic beans!
Will be just giving page, sponsor forms! But I haven't set a date so I didn't think I should begin collecting yet! I need to drive the proposed route first to see if I will survive the cyle!
